Ingredients
To make these vegetarian patties, you will need:
Paneer: Paneer blocks can be found at most supermarkets and in all Indian grocery stores.
Peas: Frozen peas or fresh peas can be used for this recipe
Broccoli: 1 small head of broccoli, cut into florets
Spinach: Use fresh spinach leaves, rinsed and dried
Seasonings: I like to use a mix of salt, garlic powder, onion powder and paprika powder. You can also add garam masala or your favorite spice mix for more flavor.
Potato starch or Potato flakes: I like using dried potato flakes which can be reconstituted using boiling hot water or milk. I always keep a few packs on hand for days when I don't have the time to boil and mash potatoes from scratch.
Bread Crumbs: This is essential for binding together the ingredients. Since this recipe is egg-free, the bread crumbs are useful for retaining the patty's shape.
How to make this recipe
Step 1: Prepare the Vegetables
- Broccoli: Cut the small broccoli into florets. Place the florets in a food processor and pulse until finely chopped. Transfer the chopped broccoli to a large mixing bowl.
- Spinach: Add a handful of spinach leaves to the food processor and pulse until finely chopped. Transfer the chopped spinach to the mixing bowl.
- Paneer: Cut 150 grams of paneer into small chunks. Add the paneer to the food processor and pulse until finely chopped. Transfer the chopped paneer to the mixing bowl.
Step 2: Add Seasonings and Other Ingredients
- To the mixing bowl, add the following seasonings: 1 tsp garam masala, 1 tsp red chili powder, 1 tsp garlic powder, and salt to season.
- Add 1/2 cup of peas to the mixing bowl.
- Add 1/2 cup of potato flakes (or use boiled potatoes) to the mixture.
- Add 1/2 cup of breadcrumbs to the mixing bowl.
Step 3: Reconstitute the Mixture
- Pour just enough boiling hot water into the mixing bowl to reconstitute the potatoes to a mashed consistency.
- Mix all the ingredients together thoroughly until well combined. The mixture should be moist enough to hold together.
Step 4: Shape the Patties
- Take a portion of the mixture in your hands and shape it into a round, flat patty. Repeat this process until all the mixture is used, making sure each patty holds together well.
Step 5: Pan Fry the Patties
- Preheat a frying pan over medium heat. Add oil to the pan.
- Once the oil is hot, carefully place the shaped patties in the pan. Cook them until they are lightly browned on one side, then flip them to brown on the other side. This should take 4-5 minutes on each side. Cook in batches if necessary, avoiding overcrowding the pan.
Step 6: Prepare the Yogurt Sauce
- In a separate bowl, mix Greek yogurt with a little mayonnaise to create a sauce.
Step 7: Serve
- Spoon the yogurt sauce over the cooked patties.

Pro Tips
- I've used reconstituted potato flakes to make the mashed potatoes for convenience. You can simply use freshly cooked and mashed potatoes, mashed to a smooth consistency.
- This recipe is very versatile. You can substitute broccoli for riced cauliflower and add in veggies such as carrots, cabbage or sweet corn into the patty mixture.
