In a food processor, add the broccoli and pulse until finely chopped. Transfer broccoli to a large mixing bowl. Repeat this with the paneer and spinach. All all finely chopped ingredients to the mixing bowl.
To the same mixing bowl, add the seasonings.
Add the frozen peas ,1/2 cup of potato flakes (or use boiled potatoes) , followed by the breadcrumbs.
Pour just enough boiling hot water into the mixing bowl to reconstitute the potatoes to a mashed consistency.
Mix all the ingredients together thoroughly until well combined. The mixture should be moist enough to hold together.
Take a portion of the mixture in your hands and shape it into a round, flat patty. Repeat this process until all the mixture is used, making sure each patty holds together well.
Preheat a frying pan over medium heat. Add oil to the pan.
Carefully place the shaped patties in the pan. Cook them until they are lightly browned on one side, then flip them to brown the other side. This should take a few minutes on each side. Cook in batches if necessary, avoiding overcrowding the pan.
Prepare the Yogurt Sauce
In a separate bowl, mix Greek yogurt with a little mayonnaise and lemon juice to create a sauce.
Spoon the yogurt sauce over the cooked patties.
Plate the broccoli, spinach, and paneer patties, and serve them hot
