Cocoa, Fruit and Nut Overnight Muesli

A nourishing breakfast that is packed with the goodness of nutrients, soluble fiber and calcium, this is a recipe that can be adapted to suit your family's preferences and can be made in a pinch

Ingredients

  • 1.5 cup rolled oats
  • 1/4 cup sunflower seeds
  • 2 teaspoon flax seeds
  • 1/3 cup chopped walnuts
  • 1/3 cup raisins
  • 1 cup yogurt
  • 1 cup whole milk
  • 5 teaspoon maple syrup
  • 2 tsp cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon powder
  • Topping:
  • 1 banana sliced
  • coconut flakes

Instructions

  • In a large mixing bowl, add the oats, seeds, nuts and raisins and give it a mix
  • Add the yogurt and milk and stir this well
  • Add the maple syrup, vanilla extract and cinnamon powder and stir well
  • Leave the mixture overnight in a covered bowl in the fridge or cover it in cling film and leave it on your counter
  • Serve it in bowls, topped with more raisins, coconut flakes and sliced banana

Notes

Overnight muesli can be made with many varieties of ingredients Some of the substitutes you could use are:
Oats- Regular rolled oats, Spelt oats
Seeds - chia seeds, flaxseeds
Nuts - Walnuts, pecans, almonds, cashew-nuts
Fruits - dried fruits like raisins, currants, cranberries or fresh like grated apple, grated pear, chopped banana
Sweetener - Maple syrup, honey, agave syrup, sugar
Toppings - Dried fruit, fresh fruit such as blueberries, strawberries, banana, etc, For an added spin, you could also top your muesli with your child's favorite cereal, or chocolate chips
