Start by slicing the eggplant into 1-cm thick slices.
In a mixing bowl, brush the eggplant slices with the olive oil.
In a pre-heated air fryer, place the eggplant slices in a single layer. Air fry at 400 F (200C) for 7 minutes, then take out the air fryer basket and flip the eggplant slices over. Return the air fryer basket back into the air fryer. Air fry for 5 minutes more. (see notes).
After the air frying cycle is complete, take out the air fryer basket. Serve with yogurt-based dip.

Notes
I have used an Instant Vortex air fryer for this recipe. The air fryer beeps at the midway mark and prompts you to turn the food over for even air frying. I set the air fryer at 12 minutes and the air fryer beeps at 7 minutes to flip the food over.
