Step 1: Preheat the oven to 350 F (180 C). Grease a muffin mould or muffin pan by brushing it with melted butter.

Step 2: Add spinach, corn, cheese (Feta, Cheddar), eggs, flour, milk, baking powder, and baking soda. Whisk to just combine.

Step 3: Once the muffin batter is just combined, stop whisking. The batter will look like this:

Step 4: Add around 2 heaped scoops of batter to each muffin mould

Step 5: Bake at 350 F for 20-25 minutes until the muffin tops turn a light golden brown
