    A refreshing, zingy twist on the much-beloved classic Aperol Spritz, the perfect summer apertif!

    Summer is on its last leg, and this is usually the busiest part of summer for us every year. With the preschooler turning four next week, and having started a whole new preschool schedule, we've hit August running. What? Its nearly the end of August you say? Adding more colour to our lives this summer, our town in the throes of a 10-day long festival, said to be the world's largest municipal folk festival. Baden is known for its status as a spa town and quiet, peaceful life. But it shows its wild side every ten years. There is a buzz in the air, with several music shows, rides, food stalls etc taking over the town. Not something us small-town folk get to see too often!

    Aperol Spritz with lime and cava

    So in the spirit of the celebration, I made this Aperol Spritz with a twist. The Aperol Spritz is the perfect cocktail to linger over a summer brunch. It is high on fizz, has fruity notes, is light on alcohol and my favourite bit - that gorgeous amber colour on it! We recently had these fizzy aperitifs at a friend's place and I'm officially obsessed now. I've been making one every chance I get. Have it at your next barbecue lunch, out on the patio, soaking up the sun, while it lasts.

    The Aperol has a classic sweet note, with hints of orange-and-rhubarb and just the right amount of bitterness. The traditional recipe for an Aperol Spritz calls for 3 parts of prosecco, 2 parts of Aperol and a splash of club soda, and a slice of orange to garnish. I added cava instead of prosecco, and you could add champage also, if you are feeling particularly extravagant.

    Ingredients
      

    • 3-4 ice cubes
    • 40 ml Aperol
    • 60 ml cava
    • Juice from a quarter of a lime
    • A splash of soda water / sparkling water
    • A slice of grapefruit to garnish

    Instructions
     

    • Add the ice to a large wine glass
    • Pour the Aperol over the ice, followed by the cava
    • Add the lime juice and the give it a stir
    • A a splash of soda water and a slice of orange to garnish

      I've never had Aperol - I prefer my prosecco "plain". I do love your pictures, though, very classy!

      I had to google what "cava" is :O But it wouldn´t be summer without one glass of Aperol Spritz! 😀

      This is my favorite to! How about freeze it and eat it as an popcicle because theres no way I can be that fancy drinking out of that kind of glas when my daughter is around...and she is around all the time!????Summer feels like over!
